Mocha Granola :) Adapted from Rachel Cooks
Yields four 1/2-cup servings
2 tablespoons brown sugar, packed  1 tablespoon espresso powder  3 tablespoons extra virgin olive oil  1 teaspoon vanilla extract  1/4 teaspoon salt  1 1/2 cups old fashioned oats  1/2 cup whole almonds, roughly chopped  1 tablespoon flax seed (optional)  1/2 cup miniature dark chocolate chips
Preheat oven to 325 degrees F (160 degrees C).
In a medium bowl, whisk together brown sugar, espresso powder, olive oil, vanilla, and salt. Fold in the oats, almonds, and flax until everything is evenly coated. Spread out granola evenly onto a rimmed baking sheet.
Bake for 30-40 minutes, stirring occasionally. Granola will be done when slightly browned and fragrant. Cool the granola to room temperature before stirring in the chocolate chips.
Serve plain, over yogurt, or in a bowl covered with milk.

Between these two pictures I have lost about 13lbs (18.5lbs in total) and I think i’m finally starting to see a change in the mirror. I notice it in my clothes but its much harder to see when I look at myself since I have so much weight to lose! Every pound is a victory and one step closer :)

Homemade Nutella
1 1/2 cup whole hazelnuts1 1/2 cups whole milk3/4 cup powdered milk1 Tbsp. mild-flavored honeypinch salt1 heaping cup chopped bittersweet or semisweet chocolate, or chips1 scant cup chopped milk chocolate, or chips
On a rimmed baking sheet, toast the nuts in a 400ºF for 10 minutes, or until fragrant and their skins begin to pop. Transfer to a tea towel, gather into a bundle and rub together to remove as much of their skins as possible. While warm, transfer to the bowl of a food processor and blend until they go from finely ground to pasty and thick, like natural peanut butter.
Meanwhile, warm the milk, powdered milk, honey and salt in a small saucepan just until it starts to boil. Remove from heat. In a glass or stainless steel bowl set over a pan of simmering water (or in the microwave), melt the chocolates, stirring occasionally until smooth.
Add the melted chocolate to the ground nuts and continue to process the mixture, stopping to scrape down the sides of the bowl as necessary. Add the warm milk mixture and process until everything is well blended and as smooth as you can get it. Makes about 2 cups.
